This is the exciting time of year “grilling” season is upon us. The Colorado lamb chops frenched make for an exciting adventure for your taste buds. It is the most tasty meat with the addition of salt pepper oregano and fresh squeezed lemon. The Colorado lamb chops freched are sold by the rack of lamb. The weight of this cut is average 8 pounds. Typically you will get 16 nice frenched lamb chops per rack of lamb. The preparations for these chops are best on an outside grill. I would begin with 5 minutes on each side over a hot grill. Locally raised baby lamb for Easter

Like every year we are taking pre orders for lamb weighing 20 through 40 pounds. They will be available for pick up after Thursday the week of April 6. We will also have hard wood charcoal for purchase. Do not forget to add chicken and pork souvlaki to your order.

Veal prices have been at their all time high. However their are a few economical cuts such as the veal breast. I found a nice recipe by the Food Network. By the end this should turn out marvelous.

Veal rack

Veal rack is the cut for veal rib chops. Typically it can be purchased as a 7 bone or 8 bone rack. This cut is extremely versatile because you can roast it whole about 10 pounds. If you are just in the mood for a grilled veal chop all you need is to remove the chine bone and cap. Next you need to cut in between each rib. You can also remove all the bone and get a boneless veal rib eye lip on. The cost for the above very, $9 through $19 per pound.

This week we are preparing Boneless Roll Tied (BRT) legs of lamb using Colorado lamb. We begin by selecting legs of lamb with the bone in choosing only legs that are yield 2 and 3 for optimal marbling. The hip bone is first removed following that is removing the shank and the round bone. We trim and the product is complete. Later on we will be cutting New York Strip Steaks approximately 12 oz portion. These are boneless strips and we use choice grade meat to complete this product.
