The more popular is the porter house steak. the first cut would be considered the favored due to its large cut of tenderloin. The next cut would be the rib eye steak preferably with the bone. These steaks can be cooked over charcoal or under the broiler. These Kansas City steaks arrive from angus cattle grazing on grass and then finished with a corn diet for that amazing marbleilization. These steaks should be cut between 16oz -20oz. For a larger appetite even 20 -24oz would be a generous portion. Pink Slime is never used HERE!

To all our customers and to all of our potential customers. We would like to thank you for visiting our website and hope you are having a satisfying experience. The topic in the news these days is pink slime. I would like to formerly convey we do not use, nor have ever used the amonia to reduce pathogenic growth. We operate in a federal inspected meat plant and although the United States Department of Agriculture says no harm can be caused while eating this filler in ground beef we have never used this filler while making ground beef. The deal is pork loin center cut. What a magnificant cut of meat. It is versitile in many ways including bone in or boneless. From the ribs you can take each chop individually. From the loin you can make a roast or make porterhouse chops. Stuffing the porkloin can also be a value added product. For the ideal meat money saver pork is where it is at. The best lamb around is here at P & F Meat Market. We have been supplying this area with the best lamb for more than 34 years. Finding the supplier of this lamb was a heart beat. His name is Rick his experience with selling raising and breeding are of the top of experts. Our lamb is from Iowa. The color of the raw meat is emaculate. The yield to fat and bones is enough for a restauranteur to say their are some savings. Also most important the flavor supersedes any red meat. If you have not yet had American lamb it is definetly much different than Australian, New Zealand and Icelandic lamb. The three mentioned do not have any flavor. Not only that the meat is tougher to chew to me. Many people think of lamb as a gamey meat. It is not. If well cooked it becomes delicious. We carry all cuts. Please inquire.

Fall reminds me of this cut?

Fall reminds me of this cut of meat. Veal hind shank osso bucco and lamb hind shanks. You know on those cool nights with the wind blowing. You are craving some meat to warm the heart. Veal osso bucco with carrots and celery is my preference. The lamb shank I prefer with potatoe and lemon baked in the oven.
Our butcher typically cuts the veal hind shank osso bucco in 1.25″ thick. We package this in 10lb increments. The Lamb hind shank we leave whole. This cut can weigh up to a 1.5lb and more. Ask us how we can assist you to put these two cuts on your menu.

Meat for the heart. This is what I say when I am working on pretty meat. Today we made beef flat Iron steaks portions of 6, 7 and 8oz. We then deboned American leg of lamb while keeping the shank intact. Next taking domestic lamb rack and taking the chine bone off. Staying with lamb taking two pieces of lamb square cut chucks for a hearty recipe for stew. Using choice chuck roll making stew was a nothing short of amazing. I love my job and cant wait to enjoy some of that delicious meat tonight.
