Snow Bound DC

Today was a pretty morning outside with the snow flakes. I was thinking it could not be great driving conditions for my delivery drivers to be in. When it snows usually you will find the Beltway, Rt. 50, 395 and 270 come to a halt. Luckily by 10 am the snow stopped falling and the roads were clear ahead.
When it snows you will also find that business in general slows down a bit. However, today I should say was business as usual. Weather for lunch or dinner the office people always have to go out and grab a bite to eat. Who wants to stay crammed in there cubicles. Thats why they say “most deals are done at the restaurant table”.

Ground Lamb and Chateaubriand

Ground Lamb is an exciting and tasty item to include on a menu. Mrs. k ‘s Toll House in Silver Spring has just done that. Maurisee Upshur Executive chef in the kitchen has included a specialty Greek sause tzatziki with a patty made of ground lamb. This is an inexpensive way to excite your customers wild appetite for lamb.
On the other realm of the meat category you get a great piece of Chateaubriand from beef. This will be a good cut of meat because two people can share. Because it comes from the tenderloin it is most tender and the price is fairly cheaper than the whole tenderloin.

The President Eats Out

On his last days in Chicago President Obama went to a trendy spot in Chicago. Apparently he is an avid fan of eating out. This should be good publicity for restaurants in DC and the surrounding areas. It also means something else many small farms are pushing for less subsidies to big farms. The little farms would like money from the government to promote green farming. In Washington although it will be tough to promote this, to the fact that big wigs promote the agriculture states that they are from.

More farms means more USDA Food Safety Inspection Service (FSIS) this will cost the government money and more responsibility. If there were many farms it would be difficult to narrow down, if there was a food borne illnesses outbreak, where did it originate? There for I see the USDA consolidating even further. It will be tough for these small farms to compete and fund there operations with soo many rules the USDA announces every year.

Lamb Deluxe Hindshank Frenched

The Lamb Deluxe Hindshank Frenched is a great menu item for this season. At 24oz it is a very generous portion of meat. This succulent meat is sure to satisfy the greatest appetite. It should be advertised on the menu as American Lamb From the Mountain Tops of Colorado. This item should be priced around $22-$25 if not more. Lambshank also comes with a bone which makes for a great plate presentation. Most executive chefs are know to call this a Volcano due to its shape when the meat is erected.
This cut of Lamb is particularly special because there are many ways to prepare. I especially enjoy this cut of meat prepared by simply baking. The meat creates a crust that has a nice salty crunchy sensation. Lemon doused potatoes cooking together with the lamb complements good to this plate. Simple seasoning would include salt, pepper and oregano. Put pan at the bottom of the oven and set oven to 400f. Cooking will take 2 to 2.5 hours.

New President Brings Gridlock

New President Barack Obama brings chaos to P & F Meat Market and other purveyors. Due to the road and bridge closings on January 19 and January 20 we will not be delivering to Washington DC. We have decided to take all meat orders on Thursday for delivery on Saturday. We normally do not operate on Saturdays but taking care of the customer is priority. The fact that most chefs will not exactly know what to expect on inauguration week, opening on Saturday for only delivery will give them a little extra time to know how much of what to order.

The Meat Market is a Roller Coaster

Beef prices have been out of control for the past two months. The beef tender market has been unstable causing the chuck market to go high sky. My take on the beef prices is that all lot more meat is heading to other countries which is causing a shortage. You must put into the equation the record number of hamburger establishments opening up. Must of these establishments use 2-way chucks and neck off chuck rolls which make a great grind.

Customers: “Times are tough.”

Having to cover a driver today, I Savas Tsimaris was able to get an analysis from a couple of customers on how times are tough. The first in Vienna Va who is the owner of an Italian Restaurant mentions how America is not the same country. Sergio says It used to be much easier to make a profit, “my expenses are increasing while my profits are decreasing.” He wonders how some people are able to pay such exhorbanent rent. If not for his name recognition he mentions and the fact that he has been in business for more than 2 decades.
Another customer Jimmy in Alexandria Va. He recently took ownership of a local family restaurant. He summed it up “I am holding my own”. Great article from Business Week.

As long as we have strong fundamentals in the businesses we run everything works out. I was always taught it starts out with the foundation, if it is strong it will be able to support what you build on top.

Today Faith checked out new website

She is very excited at the opportunity that our brand is able to reach many more people. P & F Meat Market she says has come a long way. Faith could never imagine how the internet could propel the meat purveyor business in the Washington DC area. Cutting steaks and portioning them she could remember packaging same muscle cuts into the same paper rap and writing by hand what each package contained for the freezer orders. Hind quarters contained porterhouse steaks, sirloin steaks, round steaks, many cuts for roasting such as eye round. Flank steak she remembered was very limited due to only one piece coming from each side.
